Peanut Butter and chocolate is a combination sent down from the Gods. Absolutely no denying it. If I have both ingredients in the house I sometimes indulge in weird obsessive behaviour of eating peanut butter off the spoon with choc chips piled on top. It is amazing but it has weird satanic powers and takes over my mind to the point that I have no willpower. Do any of you guys have trigger foods like that too?? I CANNOT STOP. To save myself the remorseful self loathing I just don’t buy choc chips anymore. BUT – it’s my birthday weekend and I love birthdays so much. Ordinarily I would visit my fave local cafe EenyMeeny and buy them out of their GF Peanut Butter Choc-Chip Cookies, however it’s lockdown and they’re not open. So the next best thing was just to make my own batch. Luckily enough EenyMeeny lord and genius chef Robbie happened to give me his recipe and has granted me permission to share it. So here you go friends.
Enjoy! And yes, before baking I have to admit there were a few spoons of peanut butter choc chip mounds straight into my mouth but it’s ok now because all the choc chips are finished so I am too.
GF Peanut Butter Choc-Chip Cookies
makes 9
- 260g peanut butter
- 200g brown sugar
- 1 tsp bi carb soda
- 1 egg
- 150g dark choc chips/chopped dark chocolate
- Preheat oven to 160 degrees C and line a flat baking tray with baking paper.
- In an electric mixer combine peanut butter, sugar and bi carb.
- Add the egg and mix gently, then stir through the chocolate.
- Spoon the mixture into 9 rounds and flatten slightly with the back of the spoon.
- Bake for 12 minutes or until golden.
- Leave to cool on a wire rack.
