Sticking with the Greek theme of late I thought it was about time I shared my recipe for Bouyoirdi. It’s basically baked feta with tomato, capsicum, chilli and herbs. It is as freaking delicious as you could probably imagine (baked cheeeeeese!) but has the added benefit of being the most simple and easy thing to prepare. And it happens to be GF yay 😁
Serve it with the potatoes from my last post, or rice, plus a simple leafy salad.
Serves 4
- 400gms Greek feta, sliced 1.5 cm thick
- 4 tomatoes, sliced thickly
- 1 small green capsicum, sliced into thin rounds
- pinch of dried chilli
- pinch dried oregano
- Line 4 ramekins with a decent glug of olive oil.
- Layer each one as follows: tomato slices, capsicum slices, thick slab feta, pinch of chilli and oregano, then top with slices of tomato and a drizzle of olive oil.
- Cover with foil and bake at 180 C for 20 mins.
