Never have I been more excited about something I’ve made.

Honestly, this clean and raw ‘Snickers’ is hands down, better than anything I have ever eaten. Ever.

So simple too. Just whizz it up, pop it in the freezer to set for an hour, and presto! Time to indulge. But don’t worry – it’s another one full of the good stuff. Coconut oil, raw cacao, peanuts, tahini, rice malt syrup, almonds, flaxseeds and medjool dates. That is all. Not a single nasty to be seen! But you wouldn’t pick it if you didn’t know, it just tastes like caramel, peanuts and chocolate. Like the greatest Snickers you’ve ever had. And after you’ve tried it I’m sure you’ll be hooked too.

Now just a few notes about the recipe.

I dry toasted the peanuts for a minute in a skillet as I am not overly concerned about making it 100% raw. If you are, skip this step.

Also, I used rice malt syrup as the sweetener as it is considerably cheaper than using maple syrup. The recipe would work perfectly with maple syrup instead, but is not all that nice with honey. Trust me, I tried it. The honey was much too over powering.

If you don’t have flaxseeds you could probably just use extra almonds.

Keep it in the freezer, as it goes a bit too gooey at room temperature.

This recipe is clean, raw, vegan, gluten free and refined sugar free – get ready to be blown away.

Clean and Raw SNICKERS

for the base

– 1 and 1/4 cups almonds
– 1/4 cup flaxseeds
– 1/2 cup pitted medjool dates (plus one or 2 extra if needed)
– 1/2 cup peanuts (dry toasted, optional, as mentioned above)

for the caramel

– 1/4 cup organic peanut butter
– 1/4 cup tahini
– 1/4 cup melted coconut oil, melted and cooled
– 1/2 cup rice malt syrup
– big pinch sea salt

for the top

– 1/2 cup coconut oil, melted
– 1/4 cup rice malt syrup
– 1/4 cup raw cacao

Start by melting the coconut oil, so it has time to cool.

Pulse the almonds and flaxseeds in a food processor until it resembles coarse breadcrumbs. Add the dates and pulse again until the mixture comes together. If it still seems a little dry, add an extra date or two.

Now line a square cake tin with baking paper and press the mixture into the tin so you have a firm even layer.

Scatter the peanuts over the top of the base and press them in so they’re sitting into the mix.

To make the caramel, simply place all of the caramel ingredients into the food processor and blitz until combined. Ensure your melted coconut oil is cool, otherwise the mix has the potential to split. And that is rather annoying. Pour your caramel mix over the base you have prepared and set aside.

To make the final layer, the chocolate top, mix together the coconut oil, rice malt syrup and raw cacao in a bowl. Use a whisk or fork to stir until well combined, then pour over your caramel mix. Smooth over with the back of a spoon until mixture is completely covered and you have a nice even chocolate coating.

Place in the freezer to set for an hour.

Cut into squares using a sharp knife – you can eat them straight from the freezer.

Try not to eat the whole batch in one sitting!

    Do you think I could get away with less sweetener? Its got quite a bit, so was wondering if your a sweet tooth and they taste really sweet or the amounts above just make it a little bit sweet. Haha, does that make any sense ?haha

The recipe is fairly sweet but not so much so that it is sickening.I think you could definitely get away with using less sweetener – however bear in mind that the rice malt syrup is also there for bulk. You might need to add a bit extra of the peanut butter, tahini, coconut oil etc so you have enough caramel.

    About to attempt these today. They seems similar to my raw caramel slice, except I used macadamias for the caramel. I’m hoping the tahini flavour doesn’t come through as I hate it! I’ll let you know how I go 🙂

    I recently made these with half the amount of rice malt syrup too (because i ran out!) and to my surprise was still sweet enough. So you can play around with the amount too.

    Hi, my coconut oil/rice syrup seems to have separated just as you said it might, and now I have a thick glob of peanut butter in the middle of a coconut oil soup, is there anyway to remedy this and get them to combine? Was super keen on trying the recipe!

    Made it today and maybe I got dry dates, but the base just crumbled and didn’t stick to the top layers. Just wandering what I can put in it or need to do so it stays together? Other than that it tastes good.

    Hi Amanda, definitely the dried dates that have caused the crumbly mixture. When you use the medjool dates you get a sticky mixture because they are plump and fresh. They are pretty pricey but unfortunately a bit of a necessity when making raw treats! Can you somehow scrape of the crumbly mix and add a few fresh medjool dates and process again?

    Hi Sarah – total pain in the butt when that happens!! I have actually strained off the coconut oil into a bowl, cooled it down then re-whizzzed it up with the peanut mix. That seemed to work for me. Hope that helps! Lemme know how it goes. xx

    I couldn’t get it to work, but I did strain and keep the peanut butter dough mess. I added a couple of dates, made a bar, rolled it in sesame seeds, and chilled it. It turned into some kind of super chewy PB toffee. Quite a happy save! And my second attempt at the snickers bar was delicious thank you!

    My caramel split, even though my coconut oil was left to cool completely. The only way I could fix it was to heat the mixture over a low temperature on the stovetop, whilst whisking it. Worked brilliantly, but I guess it means the ‘snickers’ is no longer raw?? Anyway, it was delicious!!

    Hi Carmen, It’s so annoying when the mixture splits! I made these again over the weekend and didn’t melt the coconut oil at all – I just placed it in the bowl with the rest of the ‘caramel’ ingredients. Anyway it was not clumpy and did not split either, I think the heat from processing was enough to break it down smoothly. I am going to update the recipe. Thank you so much for your comment xx
