Elvis was definitely onto something. Peanut Butter and Banana is a damn fine combination.
But don’t worry friends, you needn’t feel guilty about eating this treat. We have ourselves another clean + raw beauty. Last week, as some of you may already have seen, I shared a great little recipe on the Eat This! Facebook page. It was from The Pantry Stylist, a fantastic page dedicated to clean and healthy eating. Her fudge recipe was so simple I could not resist making my own little version.
I tinkered a little, to veganize the recipe, and to make it raw – because I am still slightly obsessed with the idea of eating raw treats. I also added a decent sprinkling of sea salt, which blew my mind. It took this fudge to whole new level of amazing. So no skimping on the salt people!
Also, I’d just like to add a little note on Peanut Butter.
There is quite a big difference between regular Peanut Butter and organic Peanut Butter, aside from the sugar content and the hydrogenation process. Peanuts are often grown in a crop rotation with cotton. As cotton is not a food product, the guidelines for spraying and treating the cotton crops are very different. Unfortunately these chemicals are left behind in the soil and absorbed by the next generation of crops – the peanuts. So please consider buying organic, it really is worth it for your health.
Salted Peanut Butter + Banana Fudge
adapted from The Pantry Stylist
– 1/2 cup Organic Peanut Butter
– 1/2 cup Coconut Oil, melted
– 1/4 cup Maple Syrup
– 1 Banana, mashed
– 1/3 cup Desiccated Coconut, plus extra for sprinkling
– a few good pinches flaked Sea Salt, Maldon is my personal favourite
- Place the peanut butter, melted coconut oil, maple syrup and banana into a bowl or pot. Stir well with a wooden spoon until combined. Add the desiccated coconut and stir through.
Line a loaf tin with cling film or baking paper, and pour the mixture in. Smooth the surface as well as you can and sprinkle over some extra coconut for aesthetics. - Now add a few good pinched of flaked sea salt over the top and place in the freezer to set.
- Leave for an hour or two, remove and slice into squares.
Keep stored in the freezer or fridge. I eat mine straight from the freezer and it’s great, but I am sure it would be good if you left them to defrost for 5 mins or so.

Oh wow. These look so delicious Jade! I’ve been experimenting with ‘clean’ fudge recently too. I made a batch of lemon and cacao nib fudge over the weekend… so good. This one will be next on my list! xx

I don’t think the walnut oil would work, the coconut oil is used because it sets at cooler temperatures. Maybe butter could work (if you are not vegan?).
You could definitely just omit the dried coconut though. X

Just made these… interesting! Also LOVED the dips, I’ll be making them again for sure…. Looking forward to the Chia Seed breaky and a few other recipes. I like the way you work it x

I have to say that is the perfect fugue jade i am really happy with that recipe its taken me a while to find same good raw food to make i am hoping it will kick my sugar cravings for good
